
Pre heat oven: 160c or Gas Mark 3
Ingredients:
o 200g Plain Flour
o 100g Cornflour
o 100g Caster Sugar
o 200g Unsalted Butter
o 50g approx. Caster sugar to dust over shortbread
when baked
Method:
- Heat the oven to 160C fan/gas 3.
- Sieve flour into a bowl, then add other ingredients.
- Begin rubbing all ingredients together then use hand
to mix into a dough; ensure butter has disappeared
into the dough. - Lightly dust your work surface with flour and roll the
dough out to around 3mm thick. Cut rounds from the
dough with a 7cm cutter.

- Transfer the biscuits onto the baking tray.
- Using a fork, gently stab each biscuit dough in the
middle, this will help the baking process. - Bake for 15–20 minutes, or until pale golden brown.
- Remove from the oven then dust the biscuits with
caster sugar – leave them on the tray for a few
minutes.

Then, carefully lift each biscuit onto a cooling wire
using a palette knife – leave to cool, then enjoy!
These delicious biscuits will keep for three days in an
airtight tin or sealed Tupperware box.
